Ok so no one really guessed what the alien vegetable was, but since she at least got the right category (squash) I’ll give the promotion to my girl Katie over at Faith, Food & Fitness!
I’m more than happy to promote her blog anyway because she is a wonderful source of positive energy, good eats, fun, and spiritual reflection.
So the mystery veggie was actually a Buttercup Squash! My father in law bought it thinking he had gotten ButterNUT squash, only to be surprised when these things popped up in the garden.
I cut the thing open, topped with some olive oil and salt, and roasted at 425 for about 30-40 min.
Thank you SO MUCH to all the smart bloggers that said it is okay to roast with the skin on, and eat the skin of winter squash. This made the cutting process so much easier and it tastes really good, I swear!
This squash isn’t as sweet as butternut, but creamier and sweeter than an acorn.
(Is she stillllllllllll talking about squash???!!)
I ate it along side of quinoa, green beans, and some boiled potatoes from the chicken soup I made.
Now I’m off to relax. I was trying to watch Real Housewives of DC, but seriously, this season sucks!
I’d rather watch a show about squash.
