Oops I did it again!

Hope you are all having a fabulous Wednesday! I don’t know about you guys, but I was convinced it was Thursday all day. Not sure why.

 

Before I get into today, I wanted to show you the awesome dinner I had last night.

I defrosted some of Joe’s homemade sauce with turkey meatballs and loaded two meatballs and lots of sauce onto a whole wheat hot dog bun. (Great way to use these up!). On top I melted some lowfat mozzarella and heated the whole thing in the oven until melty. HEAVEN!

 

Washed it down with this refreshing soda- a pregnancy FAVE!

Anyhow.. today I had the great idea of deep cleaning the fridge. Removing the shelves and all that jazz.

 

Great idea, until I removed the bottom shelves and drawers and had no idea how to get them back in. It didn’t help that some random piece of plastic flew off and I had no idea where it came from.

 

So 2 hours later, I finally was done. And the bottom shelf is totally wonky now. (This will be a Joe project).

 

At least it’s clean!

This afternoon I had a few errands to run and when I spotted a Starbucks, I just couldn’t resist. Ooops! This time I ordered a tall decaf soy latte. SO GOOD!

I think I actually prefer this to the pumpkin spice latte.  But don’t worry, I’m not going pumpkin free just yet.

This candle smells SO GOOD! I’ve been burning it all day.

 

Have you ever taken something apart and couldn’t get it back together? How are you at putting together furniture? (I’m spatially challenged and can’t seem to do any of this stuff)

How I do oats

Wait, I make oats?

 

I’m not a huge oatmeal fan but today I was craving a bowl. I decided to whip out the Steel Cut container and hoped I would still want to eat them by the time they were ready.

I really do prefer the steel cut variety to old fashioned oats. They have more texture.

I boiled the water and put in the 1/4 cup of oats. These take a while, so you want to have the time and something to do while you wait.

Here’s what I like to do.

While the oats cook, I cut up a banana and mixed it with pumpkin, pumpkin butter, and some cinnamon.

Mash it all up and stir into the oats after 20 minutes of cooking.

Cook for another 20 min, and stir often. I add some extra water too to thin them out.

Top with some diced pear

Mix up and enjoy!

Dentist and Dessert

I’m at the dentist..AGAIN!

I had to go back to get a filling replaced. I’m not amused.

While I’m suffering, I thought it might be nice to share with you a delicious fall dessert that I made. It’s actually an old weight watchers recipe that some of you may have heard of.

Pumpkin Mousse (serves 4)

Ingredients:

1 cup pumpkin

1 1/4 cup skim milk

1 cup fat free cool whip

1 packet sugar free/fat free vanilla pudding

3/4 tsp pumpkin pie spice

 

Mmmm..a cup o’pumpkinIMG_2965

Put all ingredients in a bowl

Whisk together until it forms a creamy mousse

Refrigerate until ready to serve. If you want to be fancy you can put more cool whip on top and a sprinkle of pumpkin spice. Or you can parfait the mousse with cool whip.

Hungry Jane

Me. Want. Pancakes!

As you guys know, breakfast is usually a boring meal for me. Today however, (because I have work to do) I decided to whip up some pancakes.

Pumpkin pancakes thankyouverymuch!

 

I had this box of Hungry Jack wheat pancake mix in the pantry, so I used that as my base and then just put in a blob of pumpkin, water, vanilla, cinnamon and pumpkin spice.

Then I just put the batter in a pan on low and waited for them to set up.

And waited and waited and waited and waited and waited……………

 

So of course, I got impatient and raised the heat too high and got the crispy outside, gooey inside kind of pancakes that no one likes. Except me. There’s no egg in the batter, so it’s fair game.

Flavors were good but this isn’t a winning recipe.

This morning has been expensive!

I took my car in for an oil change and a checkup and after talking with the mechanics, decided to get my timing belt changed.

I knew that I had to do this eventually, and better late than never.

Good ‘ol Rhonda the Honda has almost 110,000 miles on her, and this is something to be done at about 105,000. My mechanics are awesome, they give me the all of the info (in terms I understand) and never pressure me to do anything.

Today was the day though.

Goodbye $1,000. I’ll miss you.

 

At least breakfast was good.

I made a pumpkin yogurt bowl with warm cinnamon apples, a crumbled muffin and some pumpkin butter.

I started with some chobani and mixed it with pumpkin

Meanwhile I sauteed some diced honeycrisp with some cinnamon

Put that on top of the yogurt and crumbled a muffin on it

These babies have 13 grams of fiber!

VOILA! So good I almost forgot that I spend a grand before 11am.

Busy Monday

Mondays can be exciting too ya know…IMG_2370 

 

Yay! I’m so happy about this recent purchase. We cashed in some credit card points and I was able to use them towards this Garmin. I’ve been wanting one of these for a long time and finally, it’s here!

I grabbed a bagel thin and cream cheese on the way to run errands (picking up the Garmin, getting a few things checked off my list for an upcoming baby  shower, getting some stuff for Joe’s 30th b-day present, grocery shopping, cooking dinner, etc)and I kind of forgot about lunch.

Does anyone else’s appetite actually DECREASE when they do exercise? I’ve been pretty hungry this past week when I wasn’t working out, and today I haven’t really thought about food at all.
The body ebbs and flows I guess.

But don’t worry. I just ate a bowl of pumpkin yogurt.

And there will be snacks eaten in class tonight.

Oh and incase you were wondering, yes I made dinner already. I like to cook in the afternoon if I can since I am in class every night.

Speaking of class, I need to get some work done.

Don’t worry, this post isn’t about “that” topic. It’s title was inspired by the FIOS people who have been outside of my house all day. My neighbor is getting it installed and they need to dig lots of holes all around our houses to thread the cables. It is SO LOUD.

I guess it’s my fault for staying home ALL DAY. I’ve been totally consumed with putting my blog together that I really haven’t done much else. Most of the time has been spent putting together My About Me Page. So humor me, and take a look, ok?

Also, I wanted to mention that my first post wasn’t meant to put down other blogs that do a lot of the things that I won’t be doing on this blog. Trust me, I’m in awe of the many women who are able to produce extremely high quality blogs, food photos, and recipes. I’m inspired by these blogs, I just can’t be like them. That is what I was trying to say.

Food has not been exciting or abundant today. I’ve been busy. (writing about food).

Lunch was some Chobani with pumpkin and pumpkin spices mixed in. Topped with a Cascadian Farm harvest spice granola bar that I got as a freebie from my 5K.

Did I mention that I’m a pumpkin hoarder? I have about 8 cans left that I bought when I visited my mom in CT because they are out in PA. Its not illegal to transport pumpkin across state lines. RIGHT?

On the side I had a bunch of cantaloupe, and a freakin horse pill antibiotic to help mend the toe infection I have that is keeping me from running. (gross, I know, but I told you I’m honest).
