What I Ate (so far) Wednesday

…the pregnant lady edition :)

 

I know I’ve been kind of lacking on the daily food posts lately so here is one that will show you just how exciting my food intake has been.

 

Breakfast (eaten around 7am)

My new favorite breakfast has been pumpkin oats. I’ve finally figured out the perfect recipe for me. The truth is that I love the whole “pumpkin spice” flavor, but pumpkin out of a can is kind of nasty. Tastes like baby food.

Here’s how I make my oats:

Ingredients:

  • 1 ¼ cup skim milk
  • ½ cup quick oats
  • ½ cup or a little more pure pumpkin
  • ¼ cup raisins
  • 1-2 tsp honey
  • 1-2 packets of splenda
  • Heavy dashes of cinnamon and pumpkin spice
  • Trader Joe’s Valencia peanut/flax butter

How To:

  • Heat 1 cup of the skim milk + the pumpkin on the stove on medium
  • Stir in 1 tsp of honey and the cinnamon/pumpkin spice
  • When the mixture bubbles, add the oats and stir
  • Turn the flame to low
  • Cook for about 5 minutes- add the extra ¼ cup milk during this process to keep the mixture smooth
  • Add the raisins and let them cook in the oats for at least 1 min
  • Add more honey, splenda, and spices to taste
  • Top with peanut butter (optional)

 

Snack #1 (around 9:30am)

2 string cheeses and a large honeycrisp apple

Snack #2 (around 11am)

Cup o’ soup

Not all that nutritious but I needed something to hold me over until lunch and I always keep these in my desk.

Lunch (around 1pm)

Roast turkey breast (not deli meat), spinach, cucumbers, mayo on whole wheat, a yogurt, and an orange (which I actually ate later)

(The cucumbers make this sandwich! And I’d also like to note that I’m really into mayo these days. Excellent!)

Oh and look at what I found at Walmart on my lunch break! I didn’t get them because I wasn’t sure what to use them for. (pumpkin spice marshmallows + hot cocoa = yucky sounding)

Then I realized….Pumpkin spice rice krispie treats..DUH! I’ll have to go back for those suckers.

Snack (around 3pm)

2% cottage cheese cup (not pictured)

Orange (leftover from lunch)

 

Snack (about to eat this right now..)

2 hard boiled eggs

Leftover vegetable soup

Since I haven’t made it to dinner yet, I’ll let you know I have planned for the rest of the evening.

 

Dinner (around 7:30)

Whole wheat penne with tomato sauce, turkey meatballs, and Italian bread.

Spinach salad with olive oil and balsamic glaze

 

Snack (around 8:30)

Homemade dark chocolate pudding (recipe to come if it’s good!)

It’s never easy to get out of bed in the winter, but today felt especially hard.

 

That is until I brainstormed the idea of making peanut butter and jelly oats for breakfast.

 

Although I’m not a huge oatmeal fanatic, I do think they make a nice base for some delicious toppings, and they are pretty filling too.

 

This morning I heated up 1/2 cup of old fashioned oats, 1/2 cup vanilla soy milk, and 1/2 cup of water in the microwave.

 

When it was done I topped it with peanut flour spread and sf raspberry jelly.

I also wanted to let you guys know how I make my peanut flour spread since I realized it’s not on the recipe tab of the blog.

 

Peanut Flour Spread

30 g/ or 1/4 cup peanut flour

1/4-1/3 cup of milk (regular, soy, almond, or you can use water)

1-2 splendas

dash or two of salt

splash of vanilla extract (optional)

What’s on My Mind

Good morning everyone!

Today I woke up with a busy mind. I think I was actually trying to work some things out while I was still sleeping. Here’s what I’ve been pondering for the past few hours.

1. What races (if any) do I want to run this month?

Originally I thought I would sign up for a 5 miler this weekend but I just never got around to it. Plus it’s $25 and I really need to use any extra money for new sneakers and X-mas shopping.

I also heard of another race this weekend that has no entry fee, you just bring a toy to donate. The race is also a prediction run. This means that you don’t wear a watch or a garmin, you pick your distance 5,8,10 miles and then predict when you will finish. The person who predicts the closest will win! It’s a neat concept but now I need to decide what distance I would choose. (see my poll below)

Lastly, there is a Jingle Ball 5K next weekend that sounds fun, but again it’s $20.

2. Will the Praxis people give me my money back?

I called them again this morning and the lady who I spoke to said she must talk to her supervisor who isn’t in yet. So they will call me back. I worry that they will already rule out my refund before calling me back. But I know I need to think more positively.

3. What do I want to eat for breakfast?

This was kind of easy. Anything that had peanut flour paste involved. I’m obsessed. Sorry.

Somehow I ended up with oats, but regretted it when I remembered I don’t really like oats these days.  I think toast would have been yummier.

In the bowl: quick oats cooked in almond milk, peanut flour mixed with almond milk, splenda and cocoa powder. Topped with a banana and a dash of cocoa on top.

Welcome to day #3 of insatiable hunger.

 

And since I don’t want to spend the whole day feeling hungry, I decided that I need to at least start out with a breakfast that will keep me full for a while.

 

I’m always experimenting with meals and foods to see how they satisfy me. So today I tried a new oat recipe. Chocolate Peanut Butter Banana Oats.

 

I cooked some old fashioned oats on the stove while I ate 1/2 of a banana and a trader joe’s pomegranate/cranberry muffin.

To the oats I added a pinch of salt, 15grams (1/8th a cup) of peanut flour, 2 splenda packets, and 1 tsp of cocoa powder.

Once they were done I topped them with the other 1/2 of the banana.

These are great! And I feel full and satisfied. (at least for the next 30 minutes).

 

Today is going to consist of packing for my trip to Miami tomorrow and maybe a workout. I’m kind of dragging today, so I’m not sure what I’ll do. Maybe yoga in the living room.

How I do oats

Wait, I make oats?

 

I’m not a huge oatmeal fan but today I was craving a bowl. I decided to whip out the Steel Cut container and hoped I would still want to eat them by the time they were ready.

I really do prefer the steel cut variety to old fashioned oats. They have more texture.

I boiled the water and put in the 1/4 cup of oats. These take a while, so you want to have the time and something to do while you wait.

Here’s what I like to do.

While the oats cook, I cut up a banana and mixed it with pumpkin, pumpkin butter, and some cinnamon.

Mash it all up and stir into the oats after 20 minutes of cooking.

Cook for another 20 min, and stir often. I add some extra water too to thin them out.

Top with some diced pear
