A Helping Hand

I can’t take credit for tonight’s dinner all on my own. Thanks to the help of my wonderful husband, I am digging into a delicious Asian inspired rice bowl.

 

In addition to being wonderful in many ways, Joe is also an excellent cook. He hasn’t been cooking all that much lately due to stress from school and work and the fact that I’m home a lot more so I take care of most meals.

 

However, now that he has completed his MBA program, he’s had a little more flexibility.

 

Tonight Joe made some delicious fried rice and it paired very well with some simple baked tofu.

Joe starts out his rice by sautéing some diced onion (or scallion) and red pepper in some veg oil and a little butter. After they soften he adds sliced mushrooms and frozen peas at the end.

 

Once they are done he puts them to the side and adds 2-3 beaten eggs.

After the eggs solidify a bit, he scrambles them with the rest of the veggies.

He then adds cooked brown rice to the pan, and a swirl of soy sauce

Mix all together, and voila!

You could easily add shrimp, more veggies, chicken, or whatever you want to this really easy and tasty dish!

Lucky for me, I don’t have class on Fridays. So while I should be catching up on work, I usually just run errands like a maniac.

Want to maniac-it-out with me?

First stop:

Gas station. Got to fuel up Rhonda the Honda.

Second stop:

Return the husband’s nice birthday scotch for a different nice scotch. I love scotch…

Third Stop:

Library for school stuff. I check out a lot of children’s books for my school projects, so I needed to return and get some new stuff. Have you been to the library lately? It is such a great alternative to buying books and magazines.

Fourth Stop:

Old Navy!

I had a rewards card and a 40% off coupon. Got new pants and a shirt for $17

Fifth Stop:

ROSS. (think lots of random crap. like TJ Maxx without any of the glitz). Needed to exchange some shorts I bought Joe.

Sixth Stop:

CVS. Gotta get some stuff to protect my blisters for the race tomorrow.

Seventh Stop: (YOU TIRED YET???)

Pier one! I had a gift card and wanted to pick up a delicious sounding Pumpkin Caramel candle that Tina mentioned on her blog as well as some new hand soap for the bathroom.

Eighth Stop: HOME!

Time to pull out a few Halloween decorations. I’m too cheap to buy a pumpkin for outside this year. Plus if I’m buying squash these days, I’m going to eat it, not decorate with it.IMG_3007

Then it was time to EAT!

For some odd reason there were two REALLY random wedges of pizza leftover, so I heated them up alongside a spinach/arugula salad with pear, goat cheese, butternut squash and balsamic vinegar and oil.

 

Now I’m off to DUST my coffee table and light that pumpkin candle.

Gross.

If you’re a blogger you might want to sit down for this one.

 

My husband has officially declared that quinoa is gross.

Did he eat any? No. But when I was assembling my dinner he came in and said, "What is that? Looks gross."

All of a sudden I’m whisked back to that day in 3rd grade when I brought a tuna fish sandwich for lunch.

Let’s just say its not nice to call other people’s food gross.

(but can we all admit, quinoa kinda looks a little gross?)

P90X is for lovers

Ok maybe not. But Joe and I did do a workout together this morning. He wanted to show me the Kenpo X workout and thought I would enjoy it. He was right, it was fun!

It’s basically kickboxing, nothing new, but we never workout together, so I had a blast doing it.

Its just funny because you never see men in workout classes at the gym, but yet this video is somehow all the rage. Marketing genius I tell ya.

 

Breakfast was great. Just keeping it simple. Real whole grain bread from Trader Joe’s with Smart Balance margarine and some ‘loupe. That’s what the cool kids (and ones that can’t spell) call cantaloupe.

A local run w/company

Joe and I had a plan that sounded good all weekend. On Monday morning we were going to go for a run together.

He’s been doing P90X and this is his active rest week. We both have a lot going on today so we needed to get this done first thing.

We woke up at 5:45 am (plan no longer sounding good) and it was pitch black, cold, and drizzling outside. (who the hell came up with this idea??)

The plan to run on a path about 10 min from here was nixed when we realized that the sun wouldn’t be up for at least another hour.

So we decided to just run outside our front door. We ran down the street and to a park about a half mile away. It has a small loop that we ran around a million times until we hit 2.5 miles.

Upon hearing we were at about a 10:30 pace, Mr. Speed Demon competitive male darted off and ran at top speed for the rest of the run. I DID NOT let him lap me though. (Ms. Not So Speedy but also competitive)
