Tropical Treat

Happy first Monday in May!

I don’t know about where you are, but it’s pretty grey and icky outside here.

I decided to make things a little more bright and fun inside by adding some tropical fruits to my breakfast.

In the bowl is some fresh pineapple, and underneath it is some fresh mango. Mangoes were 2 for $/1 at the store, not bad! The one I bought was perfectly ripe and sweet, but is basically a mush in the bowl.

 

What I should have taken a picture of was me eating the mango off of the pit. Or the strings of mango still stuck in my teeth.

 

For those of you that don’t eat mango, you should know that there is a pit in the center of the fruit that is almost the size of the fruit itself. The soft and sweet mango clings to the pit and it’s a bit tricky to shave it off (especially when the fruit is nice and ripe).

 

Alongside of my tropical fruit bowl was three egg whites and a piece of wheat toast.

 

The rest of my day will soon be planned out on my new May notepad. I bought a set that has one for every month.

Get your EBC’s!

No, I didn’t mess up the alphabet.

 

I’m talking about EBCs…Easy Breakfast Cups!

The other day while I was frying up some eggs and totally going to be late for school, I realized that something’s gotta give.

 

Either I need to swap the eggs for something else, or be able to do this faster. (Note that waking up earlier is not an option here)

 

So last night I came up with these little pre-made omelet cups that are delicious and quick on the go. Just reheat (or don’t) because they taste great at room temperature too.

 

Easy Breakfast Cups (makes 12 cups)

  • 1 container egg beaters
  • Any veggies you like (I used spinach, mushrooms, red pepper, and onion)
  • Canadian Bacon (optional)
  • Shredded Cheese (optional)
  • Non stick cooking spray

Sautee up the veggies in some cooking spray.

Spray your muffin tin with cooking spray and add the veggies

Note: you can also use a mini muffin tin!

Add the Canadian bacon on top of the veggies

Pour the egg beaters on top of that- about 3/4 full

If you’re adding cheese- put it on top before baking. Bake at 350 for about 20 minutes or until the egg is firm and the tops are getting a bit golden.

And there you have it! Fancy pants omelets even if you’re on-the-go!

The Great Indoors

Happy Saturday folks!

 

I’m spending mine inside getting some work done for school next week.  It’s nasty out (freezing rain, sleet, etc.) which is perfect weather for a day spent in PJ’s.

 

I started off the morning with some flavored brew

I’m normally a grind your own beans kinda gal, but I love me some DD French Vanilla. I couldn’t resist when I saw it on sale.

 

Coffee was followed by an awesome breakfast sandwich that was inspired by Tina’s new favorite lunch.

 

I topped an everything bagel thin with a garlic and herb laughing cow, an overeasy egg, tomato, and spinach.

This was seriously one of the best breakfast sandwiches I’ve ever had. The Garlic and Herb laughing cow MADE IT!

 

The rest of the morning (and now afternoon) is being dedicated to a project for my class. I’m constructing a game board that will be used for classroom management. For each 30 minutes on task, the class will move 1 square. Once they get to the end, they receive an afternoon "game day".

 

There are also "chance" squares which give them the opportunity to pick from smaller prizes. The roads are "fast tracks" that move them ahead on the board.

The bus is their game piece. I also made a big bus that has all of the kids pictures on it (in the windows on the bus)

I love foam letters and sheets. That’s what I used for everything on the board.

After this, I am going to write up some lesson plans and I’m just taking it easy the rest of the day.

A Breakfast Party

Soupy Outside/Soupy Inside

So… my class at the gym was one-on-one.  I knew it.

 

But I loved it! The nature of the class is bootcamp- so it’s plyo stuff, compound lifting, and core work. The instructor did it with me and it was just like having my own personal trainer.  SCORE!

 

As far as the weather, it’s still pretty rainy and wet outside.  And now it’s getting cold too!

 

When I went back to Trader Joe’s this afternoon to return the corn they sold me that was rotten (gross), I picked up a new item. It was the perfect thing since I was craving some warmth and comfort.

I served it up the soup with some egg whites topped with TJ’s corn and black bean salsa, and a side of blackberries.

I also topped the soup with some goat cheese.

 

I thought the soup was delicious! It was flavorful and really thick and creamy. I highly recommend the addition of the goat cheese too.

 

Glad I was able to turn some rotten corn into something fabulous!

 

Another reason I love soup is because it forces me to eat slowly. I’m such a fast eater and soup helps me to take my time and savor my food.

Ooey Gooey

I had a glorious night’s sleep last night!

 

I’m really thankful for that since I’ll be up at the butt crack of dawn tomorrow morning.

 

Today will consist of relaxing, seeing my mom and sister who are coming this afternoon, spending some more time at the Expo, and being nervous about various race details.

 

To fuel up for the day, I made myself an ooey gooey breakfast bagel.

Everything bagel thin, 3 egg whites, american cheese, morningstar veggie sausage and ketchup.

 

It really hit the spot.

 

Have you tried Morningstar veggie sausage? It has great flavor and 10 grams of protein. It’s perfect weekend fuel when I don’t eat as often.

Silly Face

Doesn’t my breakfast look like a muppet?

Fortunately it didn’t taste like one. And seriously, aren’t eggs better when someone else makes them for you? My mom whipped us up some egg whites and cheese and we both enjoyed some huge mugs of coffee and conversation.

Nothing makes breakfast more enjoyable than a good company.

Halloween Road Trip!

It’s time for another weekend getaway. I’m headed to my mom’s house in Connecticut to spend some time with the fam.

 

We will also be taking my nephew trick or treating, and I can’t wait!

 

The little guy seems to favor animal costumes. Last year he was cow, and this year he will be a puppy.

Before I get on my way, I wanted to have a hearty breakfast to hold me over for the 3 hour drive.

 

This is my healthy sausage egg and cheese sandwich.

It packs over 20 grams of protein!

3 egg whites, 1 slice 2% american cheese, 1 morningstar veggie sausage patty, on an everything bagel thin. With ketchup of course!

I also made some ice coffee with vanilla soymilk. I used leftover coffee from yesterday instead of making new stuff because I am definitely hitting up Dunkin Donuts for a roadie.IMG_3280

It’s important to eat healthy today, because who knows how much chocolate I’ll consume this weekend. I’m sure it will be a lot if it’s up to this guy!

It’s Monday. Class was long. Leftovers are sparse. (Yes, we housed the chicken, and I forfeited the rest to Joe)

 

Eggs are on the menu for me.

 

First order of business, use up leftover spinach/arugula blend

Wilt it down and season with salt and pepper. (Seasoning on every layer adds good flavor!)

Crack 3 egg whites on top of the wilted greens. Season again.

Crumble goat cheese on eggs while they set up

Tomorrow at this time…

I’ll be about 20 minutes into my first ever 10K!

I can’t believe how fast this race came up. It felt so far away when I registered for it this summer. 

 

I’m getting pretty excited to tackle the 6.2 mile course tomorrow morning, but I’m dealing with some major blisters on my toes that I need to figure out before tomorrow.

 

If you are a runner, can you please let me know-

What do you do about blisters on race day?

Do you wear your camelbak during races?

I’m currently not planning to wear my camelbak, but I just hope there are water stops at good intervals. I’m not about to let thirst get in my way.

 

Breakfast this morning was inspired by Julie who is known for her PB&P sandwiches.

Sandwich thin, better n’ peanut butter and pear sprinkled with pumpkin spice. 3 egg whites on the side. (I’ve rekindled my love affair with eggs for breakfast lately)
