Oops I did it again!

Hope you are all having a fabulous Wednesday! I don’t know about you guys, but I was convinced it was Thursday all day. Not sure why.

 

Before I get into today, I wanted to show you the awesome dinner I had last night.

I defrosted some of Joe’s homemade sauce with turkey meatballs and loaded two meatballs and lots of sauce onto a whole wheat hot dog bun. (Great way to use these up!). On top I melted some lowfat mozzarella and heated the whole thing in the oven until melty. HEAVEN!

 

Washed it down with this refreshing soda- a pregnancy FAVE!

Anyhow.. today I had the great idea of deep cleaning the fridge. Removing the shelves and all that jazz.

 

Great idea, until I removed the bottom shelves and drawers and had no idea how to get them back in. It didn’t help that some random piece of plastic flew off and I had no idea where it came from.

 

So 2 hours later, I finally was done. And the bottom shelf is totally wonky now. (This will be a Joe project).

 

At least it’s clean!

This afternoon I had a few errands to run and when I spotted a Starbucks, I just couldn’t resist. Ooops! This time I ordered a tall decaf soy latte. SO GOOD!

I think I actually prefer this to the pumpkin spice latte.  But don’t worry, I’m not going pumpkin free just yet.

This candle smells SO GOOD! I’ve been burning it all day.

 

Have you ever taken something apart and couldn’t get it back together? How are you at putting together furniture? (I’m spatially challenged and can’t seem to do any of this stuff)

A Perfect Day?

I was sitting here drinking some coffee and wondering what to do with my day.

So as usual, I was perusing blogs and when I got to Tina’s blog, I saw that she had posted about her ideal day.

 

She inspired me to think about how I can make today the perfect day!

Well first, here is my description of the perfect day (no monetary/injury restrictions)

 

  • Wake up rested, drink coffee and relax
  • Eat Breakfast
  • Go for a long run
  • Follow up the run with a delicious sushi lunch

  • Enjoy some shopping, followed by a mani/pedi and hot stone massage
  • Meet up with Joe for a fabulous dinner out

Here is what I’m ACTUALLY going to do today!

 

  • Wake up rested, drink coffee and relax (CHECK!)
    Do a yoga video in the living room
  • Take a drive with the windows open to go and pick up my transcript from school
  • Apply for a job I saw online that I am envisioning will be mine
  • Paint my own nails
  • Enjoy some lunch on the deck and listen to some music
  • Enjoy an awesome dinner out with Joe and some other people

 

Honestly, today isn’t going to be that far off from my perfect day!

And the bottom line is that- any day where I am alive, the sun is shining, I have a roof over my head and people that love me…..is the perfect day.

A Breakfast Party

The idea of tea

There is an image that comes with tea drinking.

 

Here’s what I envision.

  • Getting curled up on the couch with tea feeling oh-so-relaxed
  • Being able to choose tea over other junk food and sweets (don’t magazines always tell you to relax with a cup of tea instead of eating more?)
  • Enjoying various health benefits due to the intricate herbal blends in tea
  • Being comforted by the warmth and smell of tea and listening to stories that someone’s grandmother or mother tells
  • Tea being the healthier choice compared to coffee

 

For some reason I feel like tea is coffee’s cute and sweet little sister.

And coffee is the rebellious-"don’t even think about drinking me after 4pm"- cool guy.

And hot chocolate is the chubby little brother that tries to be taken seriously, but is always still considered a little kid.

 

So even though I’m not a tea drinker, I still have quite the stash

Coffee Talk on a Busy Day

I have a crazy day ahead! But I wanted to share with you a new idea I tried yesterday.

 

I had been craving some flavored coffee but I can never pick just one. So at the grocery store I combined a lot of different beans and ground them up all together.

 

This morning I had a cup of coffee that was a mixture of:

- Cinnamon Hazelnut

- Vanilla Spice

- Caramel

- Vanilla Hazelnut Creme

It is great!

 

I’m bringing this travel mug with me while I tend to my 6th graders today.

 

I suggest doing this where the beans are self serve so you don’t have to buy that much. This way you can make all kinds of combos and probably spend less than one pumpkin spice latte at starbucks.

How I do oats

Wait, I make oats?

 

I’m not a huge oatmeal fan but today I was craving a bowl. I decided to whip out the Steel Cut container and hoped I would still want to eat them by the time they were ready.

I really do prefer the steel cut variety to old fashioned oats. They have more texture.

I boiled the water and put in the 1/4 cup of oats. These take a while, so you want to have the time and something to do while you wait.

Here’s what I like to do.

While the oats cook, I cut up a banana and mixed it with pumpkin, pumpkin butter, and some cinnamon.

Mash it all up and stir into the oats after 20 minutes of cooking.

Cook for another 20 min, and stir often. I add some extra water too to thin them out.

Top with some diced pear

Mix up and enjoy!

Hungry Jane

Me. Want. Pancakes!

As you guys know, breakfast is usually a boring meal for me. Today however, (because I have work to do) I decided to whip up some pancakes.

Pumpkin pancakes thankyouverymuch!

 

I had this box of Hungry Jack wheat pancake mix in the pantry, so I used that as my base and then just put in a blob of pumpkin, water, vanilla, cinnamon and pumpkin spice.

Then I just put the batter in a pan on low and waited for them to set up.

And waited and waited and waited and waited and waited……………

 

So of course, I got impatient and raised the heat too high and got the crispy outside, gooey inside kind of pancakes that no one likes. Except me. There’s no egg in the batter, so it’s fair game.

Flavors were good but this isn’t a winning recipe.

Catchy name, no?

Well this cup o’ joe made me a little late for class, but boy was it good! (and it wasn’t $5)

So here’s the deal. You just need one nifty tool- an aerolatte frother, or something like it. You can find them at Ikea for $2. I’ve used the Ikea one and it’s fabulous.

Here’s how you make it.

Make coffee, you can use regular or flavored.

Take 1/3-1/4 cup cold almond milk and froth it for 30 seconds

Then heat the milk in the microwave for 30 seconds

Meanwhile, sweeten the coffee with splenda

WHAAAAAT? Artificial sweetener? Yes. If you don’t like it, you can use whatever you DO like. No splenda bashing here.

(Oh and mine is fake splenda, sucralose. Even better!!)

Also add a dash of cinnamon and pumpkin pie spice to the coffee itself.

Pour the warm milk in the coffee and spoon the foam on top. Sprinkle with more spices.

Enjoy!

 

It’s rainy and cold here. Just finished some leftover Pork and Sauerkraut which is even better the next day. Now I can’t wait to relax and watch TV on the couch!

Beefed up Leftovers

Sorry Matthew McConahey, there wasn’t really beef in my lunch today. I did however add some nice additions to spruce up my "You are Fat Grilled Chicken" leftovers from dinner on Friday night.

I went on a crazy vegetable spree at the store yesterday while I was trying to speed shop and get home in time for the Steelers kickoff. I totally overdid it, so I needed to cook some of them.

I sautéed leftover yellow and green squash and roasted an eggplant.

The chicken had some balsamic, tomato, pesto type sauce on it, so it added a good flavor with the veggies.

I also had a granola bar for dessert.

Right now I’m dragging, so I think I’m going to go make some coffee. Might attempt an at home version of a pumpkin spice latte.

Do I stay or do I go?

Last night my toes were feeling pretty good. And as I slept I had visions of little running fairies in my head. I could hear my feet on the pavement. I could feel the heat on my face and the wind in my hair.

Tomorrow I would run again.

Enter this morning, the rain is POURING down and it doesn’t look like it’s stopping anytime soon.

I actually really like running in the rain (if it starts raining after I’ve already started running). But getting out there on a day like this is not too appealing.
I’m sitting here in my running clothes on the couch. Looking out the window like a little kid.

Do I stay or do I go?

In the meantime I ate a standard run breakfast.

Toast with 1/2 a banana and a tiny bit of peanut butter.
