At 4pm, I finally awoke from my nap.
I don’t know about you guys, but I am soooooo groggy when I wake up from naps. I get really confused and cranky. It felt like morning all over again, and therefore, I felt like having some pancakes.
As you guys know, I finally bought the infamous Trader Joe’s peanut flour the other week. You might also know that I made some terrible pancakes the other week too.
I was determined to make some good pancakes and eat all of them like it’s my job.
Delicious Peanut Pancakes (serve 1 hungry girl or 2 people)
(*disclaimer, they don’t really taste like peanuts)
Ingredients:
1/4 cup peanut flour
1/4 cup whole wheat pancake mix
3/4 cup light vanilla soy milk
1 tsp baking powder
1 tsp vanilla
1 tsp cinnamon (I ended up just sprinkling this on top)
2 splenda packets
1 egg
Mix all of the ingredients together and beat with a fork
Cook the pancakes in a nonstick pan with a little butter or pam
Flip them once they have some bubbles and the ends are darker around the outside.
Look! I did it! Fluffy and delicious.
Top with syrup and sprinkle with cinnamon.
The great thing is that the pancakes have about 20 grams of protein and 5 grams of fiber. Very filling and healthy.
Now I’m going to attempt to do some homework.
