Good morning- part deux

At 4pm, I finally awoke from my nap.

 

I don’t know about you guys, but I am soooooo groggy when I wake up from naps. I get really confused and cranky. It felt like morning all over again, and therefore, I felt like having some pancakes.

 

As you guys know, I finally bought the infamous Trader Joe’s peanut flour the other week. You might also know that I made some terrible pancakes the other week too.

 

I was determined to make some good pancakes and eat all of them like it’s my job.

 

Delicious Peanut Pancakes (serve 1 hungry girl or 2 people)

(*disclaimer, they don’t really taste like peanuts)

Ingredients:
1/4 cup peanut flour

1/4 cup whole wheat pancake mix

3/4 cup light vanilla soy milk

1 tsp baking powder

1 tsp vanilla

1 tsp cinnamon (I ended up just sprinkling this on top)

2 splenda packets

1 egg

Mix all of the ingredients together and beat with a fork

Cook the pancakes in a nonstick pan with a little butter or pam

Flip them once they have some bubbles and the ends are darker around the outside.

Look! I did it! Fluffy and delicious.

Top with syrup and sprinkle with cinnamon.

The great thing is that the pancakes have about 20 grams of protein and 5 grams of fiber. Very filling and healthy.

 

Now I’m going to attempt to do some homework. :(

Wow what a day!

Sorry for the lack of posts, we had a lot of the agenda today. We were up and at ‘em starting at 7:30 this morning. I did a little cleaning, made some coffee, and then we headed about 40 minutes away to do some volunteering.

Joe’s company has a partnership with the United Way and every year they take part in the United Way "Day of Caring". This year, we went to a nursing home to spend time with the residents.

Breakfast was a quick bagel thin and cream cheese, and some greek yogurt with kashi and kamut puffs.

Oh and of course, I packed some snacks. Because, well, that’s what I do. If you don’t know if there will be food, be prepared. :)

The whole group of volunteers, including two friendly pups who the residents really liked visiting.

Following the volunteering, I had to drive about an hour away to a baby shower for the rest of the afternoon. And then another hour home. I just got here and I am so happy!

We’re ordering a pizza, and then probably catching a movie.

The Costco Curse

Find a new food item.

Fall in love with that food item.

Can’t get enough of that food item.

Always at the store buying that food item.

What, Costco sells that food item?

I can buy an ungodly amount of that item?

Overstuff the freezer with that food item.

Stop liking food item.

Forget about food item.

Complain about lack of freezer space.

Repeat.

This is how it goes with me anyway. I was on a major kick of eating egg white sandwiches with Morningstar veggie sausage every morning. But those spicy little soy patties are expensive! And I kept running out (you see where I’m going with this)..

I bought a huge pack at Costco a few weeks ago and I have had maybe 2 egg sandwiches. And both of the patties I used were leftover from the small grocery store box I still had in my freezer. CRAP.

It all started when I was little and I got on a Ramen Noodle kick. My mom bought this huge box of them and then that was it for me. No more Ramens. (probably a good thing) But I think she might still have that carton somewhere. It’s not like they go bad.

Breakfast this morning was a simple bagel and cream cheese w/some fruit

I like these Thomas’ Bagel thins. The everything ones are really good. Although in this particular package the tops are so thin that they burn every time.
